Wagyu Loco Moco


Hawaii meets wagyu in this boujee version of the island’s ultimate comfort plate. Wagyu patty + fried egg + rice + wagyu-fat gravy = Aloha, but make it luxury.

Ingredients:


Sauce

  • 1/4 lb beef patty (wagyu short rib and ribeye)

  • 3/4 cup of wagyu fat

  • 2 Tbsp Worcestershire sauce

  • 1 Tbsp Sugar

  • Splash of ketchup

  • 1/4 cup flour

  • 1 cup beef broth

  • 1/2 cup mushrooms 

  • 1 minced shallots 

  • 1 Fried egg 

  • Cooked rice

  • Aonori to top it off


Directions:

  1. Mix in beef broth, worchestire sauce, sugar, and ketchup. Set aside.

  2. Sauté onions and mushroom. Set aside

  3. Combine wagyu fat, wagyu short rib meat and ribeye after mincing finely or using a meat processor.

  4. Form into a patty.

  5. Fry wagyu burger both sides roughly 4 min each side on medium high heat then take out leaving the wagyu and mix in the flour. It should make a pasty like roux.

  6. Add in the broth mixture, onions and shrooms. Mix until you have nice thick consistency.

  7. Fry an egg.

  8. Stack it all together: rice, patty, sauce then egg. Sprinkle Seaweed.
