Vegan Pancit

Ingredients:
2 Tbsp vegetable oil
4 cloves garlic thinly sliced
1 small brown onion thinly sliced
1 red bell pepper julienned
1 large carrot julienned
150 g shiitake mushrooms sliced
Calamansi to serve or lime
½ small cabbage thinly shredded
Shrimp
200 g bihon noodles or thin rice vermicelli
150 g snow peas
4 spring onions julienned
Sauce
200 ml veggie stock
1 teaspoon sugar
3 Tbsp soy sauce
2 Tbsp hoisin sauce
Directions:
Thrown in Vermicelli noodles in bowl of hot water to soften up around 3 minutes
In a wok, stir fry minced garlic and onions until translucent and throw in mushrooms.
Lastly add all your veggies in the wok cook and toss around for 5 minutes and cover with lid for another 4 minutes.
In a separate bowl, mix in veggie stock, sugar, soy sauce, and hoisin sauce. Add in the wok and stir.
Drain noodles and mix in the wok with some salt and pepper. Serve.
