Vegan Pancit

The classic Filipino noodle party — but make it plant-based! Bright, colorful veggies tangled up in savory soy-citrus goodness. Proof that you don't need meat to have a fiesta.

Ingredients:


  • 2 Tbsp vegetable oil

  • 4 cloves garlic thinly sliced

  • 1 small brown onion thinly sliced

  • 1 red bell pepper julienned

  • 1 large carrot julienned

  • 150 g shiitake mushrooms sliced

  • Calamansi to serve or lime

  • ½ small cabbage thinly shredded

  • Shrimp

  • 200 g bihon noodles or thin rice vermicelli

  • 150 g snow peas

  • 4 spring onions julienned


Sauce

  • 200 ml veggie stock

  • 1 teaspoon sugar

  • 3 Tbsp soy sauce

  • 2 Tbsp hoisin sauce


Directions:

  1. Thrown in Vermicelli noodles in bowl of hot water to soften up around 3 minutes

  2. In a wok, stir fry minced garlic and onions until translucent and throw in mushrooms.

  3. Lastly add all your veggies in the wok cook and toss around for 5 minutes and cover with lid for another 4 minutes.

  4. In a separate bowl, mix in veggie stock, sugar, soy sauce, and hoisin sauce. Add in the wok and stir.

  5. Drain noodles and mix in the wok with some salt and pepper. Serve.
