Ube Pao de Queijo (Ube Version)


Brazil meets the Philippines in a pastel purple puff of cheesy, chewy joy. It’s pão de queijo, but make it ube and extra huggable.
Brazil meets the Philippines in a pastel purple puff of cheesy, chewy joy. It’s pão de queijo, but make it ube and extra huggable.

Ingredients:


  • 2/3 cup (85g) Grated mozzarella cheese or any other cheese

  • 1/4 cup (25g) Parmesan cheese, grated

  • 1 cup Tapioca flour add 1/3 if no Ube powder

  • 2/3 cup Milk

  • 1/3 cup Oil

  • 1 Egg, large

  • 1/2 teaspoon Salt

  • 1 Tbsp Ube extract

  • 2 Tbsp Ube powder

Directions:

1. Preheat oven to 400°F (200°C).

2. In a large bowl mix Ube powder and tapioca flour. Set aside. 

3. In a large pan place milk, ube extract, oil and salt. Bring to a boil. Pour into the tapioca and stir until combined. Add egg and stir until combined. add cheeses and stir until incorporated and a sticky dough forms. 

4. Shape the dough into balls and place on a baking tray lined with parchment paper. Bake for 15-20 minutes, until lightly golden and puffed.

5. Eat warm or let cool.
