Ube ice cream cookie sandwich

Ingredients:
Ube ice cream
● 1 Tbsp Ube powder
● 4 tsp Ube extract
● 1 can condense milk
● 2 cups heavy whipping cream cold
Ube powder
● Dehydrator
● Sliced boiled Ube potatoes
● Blender
Ube cookies
● 3/4 cup light brown sugar
● 1 tsp Ube extract
● 2 sticks butter (16 Tbsp) room temp
● 2 tsp baking soda
● 2 Lrg eggs
● 3/4 cup sugar
● 1 tsp salt
● 2 1/2 cups flour
Directions :
Ube powder
1. Boil peeled flat sliced purple potato
2. Dehydrate 110°F for 8 to 12 hours
3. Blend to powder
Ube ice cream
1. In a bowl, whip heavy cream until it peaks
2. Add condense milk and whisk until firm
3. Add Ube powder and extract and mix
4. Put in a loaf pan and freeze for 5 hours
Ube cookies
1. Mix flour, baking soda, and salt put aside
2. Mix butter, sugars, and Ube extract
3. Add eggs and mix again
4. Now slowly mix in the flour mixture slowly
5. Put Tbsp of dough on a baking sheet and bake for 375 degrees for 7-9 minutes. Let it cool for 5 minutes
Ube ice cream sandwich
1. Scoop ice cream and sandwich the cookies. Done.
