Ube Beignets


New Orleans took a vacation in the Philippines and brought back purple powdered dreams. Light, fluffy, and powered by ube magic — it’s Mardi Gras in your mouth.
New Orleans took a vacation in the Philippines and brought back purple powdered dreams. Light, fluffy, and powered by ube magic — it’s Mardi Gras in your mouth.

Ingredients:


  • 1 Tbsp of Ube powder optional

  • 1 Tsp of Ube extract 

  • 1 tsp powdered sugar, for dusting

  • 1 cup AP flour

  • oil for frying

  • 4 large eggs

  • 1 pinch salt

  • 1 stick unsalted butter, cut into pieces

  • 1 cup water

  • 2 Tbsp sugar


Directions:

  1. Melt 1 stick of butter and a cup of water in a pan.

  2. Add sugar, ube extract and cook for a minute.

  3. Gradually add a cup of flour, some ube powder mix and cook until the dough pulls away from the sides and starts to form a ball. Remove from heat and let it cool.

  4. Transfer to a bowl and use a hand mixer mixing in 4 eggs one at a time until pasty.

  5. Keep it cool in the fridge for an hour.

  6. Form dough into small bite size balls and deep fry into a pot of hot oil.

  7. Once the dough balls start to crack creating a seam and brown it’s ready.

  8. Take out from the oil, set it on a plate and serve after coating with powdered sugar.
