Ube Beignets

Ingredients:
1 Tbsp of Ube powder optional
1 Tsp of Ube extract
1 tsp powdered sugar, for dusting
1 cup AP flour
oil for frying
4 large eggs
1 pinch salt
1 stick unsalted butter, cut into pieces
1 cup water
2 Tbsp sugar
Directions:
Melt 1 stick of butter and a cup of water in a pan.
Add sugar, ube extract and cook for a minute.
Gradually add a cup of flour, some ube powder mix and cook until the dough pulls away from the sides and starts to form a ball. Remove from heat and let it cool.
Transfer to a bowl and use a hand mixer mixing in 4 eggs one at a time until pasty.
Keep it cool in the fridge for an hour.
Form dough into small bite size balls and deep fry into a pot of hot oil.
Once the dough balls start to crack creating a seam and brown it’s ready.
Take out from the oil, set it on a plate and serve after coating with powdered sugar.
