Ingredients:
8 sheets phyllo dough
1 cup crumbled feta cheese
2 large eggs
½ cup ricotta cheese
1 large onion, chopped
10 oz spinach, rinsed and chopped
½ cup chopped fresh parsley
2 cloves garlic, minced
1 bunch green onions, chopped
Olive oil
Directions:
In a hot pan with olive oil, add in onions and garlic until translucent, mix in spinach and parsley until cooked. Set aside.
In a bowl, scramble eggs, add feta cheese and ricotta cheese and mix. Lastly adding spinach mixture.
In a 9” pan, spray some olive oil, add 4 phyllo dough sheets, spread spinach mixture and lay 4 more sheets on top.
Bake at 350 for 30 minutes. Cut into squares. Serve.
