Spanakopita


Greek for “I dare you to eat just one.” Flaky phyllo pastry packed with spinach, feta, and a whole lot of flaky-crispy-salty magic.
Greek for “I dare you to eat just one.” Flaky phyllo pastry packed with spinach, feta, and a whole lot of flaky-crispy-salty magic.

Ingredients:


  • 8 sheets phyllo dough

  • 1 cup crumbled feta cheese

  • 2 large eggs

  • ½ cup ricotta cheese

  • 1 large onion, chopped 

  • 10 oz spinach, rinsed and chopped

  • ½ cup chopped fresh parsley

  • 2 cloves garlic, minced

  • 1 bunch green onions, chopped

  • Olive oil


Directions:

  1. In a hot pan with olive oil, add in onions and garlic until translucent, mix in spinach and parsley until cooked. Set aside.

  2. In a bowl, scramble eggs, add feta cheese and ricotta cheese and mix.  Lastly adding spinach mixture.

  3. In a 9” pan, spray some olive oil, add 4 phyllo dough sheets, spread spinach mixture and lay 4 more sheets on top.

  4. Bake at 350 for 30 minutes. Cut into squares. Serve.
