Satsuki’s Bento サツキの弁当 (My Neighbor Totoro)

Ingredients:


  • 1 tbsp oil

  • 1 umeboshi

  • 1 cup of cooked rice

  • 1 shishamo (salt water smelt)

  • Edamame

  • Sakura denbu 

Sakura denbu

  • 1 piece cod

  • 5 drops of water

  • One drop red food coloring

  • A pinch of salt 

  • 1 tbsp sake

  • 1/2 tbsp sugar


Directions:

  1. In a pan boil cod until fully cooked.

  2. Transfer into a mesh strainer over a bowl of water.

  3. Tear the cod apart until it becomes completely flakey and shredded.

  4. Dry fish with paper towel.

  5. Pan fry on fish with sake, salt, sugar and add red food dye until it looks cotton looking. Set aside.

  6. Salt shishamo and grill until full cooked.

  7. Boil edamame for 2 minutes 

  8. Set everything in a bento box centering an umeboshi in a bed of rice.
