Sangoro's nihachi soba (One Piece)


Cold soba noodles that are 80% buckwheat, 20% wheat — pure Wano craftsmanship. Slurp-approved by Luffy and Zoro (and totally worth dodging ninja attacks for).

Ingredients:


Heart shaped Kamaboko

  • Drop of red food coloring

  • 1/2 tbsp mirin

  • 1 egg white

  • 1/2 Tbsp sugar

  • 1 tsp salt

  • 200 g fresh white fish


Soba noodles

  • ¾ cup all-purpose flour

  • 1 1/2 cups  filtered water, chilled, divided

  • Tapioca starch, for sprinkling

  • 3 ⅓ cups soba-grade buckwheat flour


Toppings

  • Spinach

  • Agedama (deep fried tempura batter crumbs)


Soup

  • Roasted garlic

  • 1 cup of Katsuobushi

  • 2 tbsp mirin

  • 1 tbsp sake

  • 2 tbsp soy sauce

  • 1 tsp truffle salt

  • Kombu soaked in 4 cups of water

  • Roasted Sliced ginger

  • Roasted onions


Directions:


Heart shaped kamaboko

  1. Clean and rinse off cod filet and blend with egg whites, mirin, and salt. Separate into 2 portions. The second portion mix with red food coloring for a pink color

  2. Find a heart log mold and fill the inside white and the pink portion outside and steam  for 20 minutes.


Soba Noodles

  1. Mix buckwheat flour and AP flour while gradually adding cold water.

  2. Knead flat and cut thin sliced noodles. Boil for 2 minutes and drain.


Soup

  1. Roast the garlic, ginger, and onions. 

  2. In a pot with water and kombu soaked over night and remove to get cooking.

  3. Simmer with roasted veggies, kasuobushi for 10 minutes and strain.

  4. Mix in soy sauce, mirin, sake, truffle salt and boil for a minute.


Assemble

  1. In a serving bowl, add soup, soba, toppings along with boiled veggies. Serve.
