Crispy, golden triangles of happiness stuffed with spiced potatoes and good vibes. Born in India, loved everywhere — like the Beyoncé of snacks.
Ingredients:
Samosa dough
● 2 cups flour
● 3/4 tsp carom seeds (ajwain)
● 1/4 cup melted ghee
● 3/4 tsp salt
● 6 tbsp water
Potato filling
● 1 tsp lemon juice
● 1 to 2 green chillies chopped
● 4 potatoes
● 1 tbsp ginger paste
● 1/2 cup green peas
● 4 tbsp chopped coriander leaves
● 1 tbsp ghee
● A pinch of hing (asafoetida)
● 1/2 tsp salt
Spices
● 3/4 tsp red chili powder
● 1/2 tsp fennel powder
● 1 tsp garam masala
● 3/4 tsp cumin seeds
● 1/2 tsp cumin powder
Directions:
1. Boil potatoes
2. Crumble put aside
Samosa dough
1. Mix flour, carom seeds, salt, and oil in mixing bowl.
2. Rub flour well for 2 to 3 mins in between the palms to incorporate the ghee well. 3. Take handful of flour and press down with fingers.must hold shape and not crumble 4. Add water little by little and mix flour to form a stiff dough. Cover and rest for 30 minutes.
Potato filling
1. Heat pan with oil and add cumin seeds
2. When sizzle add ginger and fry until fragrant. 30 seconds
3. Add green peas saute 2 minutes
4. Add red chili powder, garam masala, cumin powder and fennel powder. Saucer 30 seconds. 5. Add potatoes and sprinkle salt. Mix and sauce for 2 minutes and add coriander leaves and set aside to cool
Making samosa
1. Knead the dough gently to smoothie a bit. Roll into balls and flatten like a circle. 2. Cut circle In half and make a cone shape and add filling. Apply water to seal.
Deep fry
1. Deep fry for until crispy.
2. Serve with mint chutney and sweet tamarind chutney.
