Okonomiyaki Pizza


Japan’s savory pancake and Italy’s pride had a love child. Layers of cabbage, cheese, savory sauces, and pizza toppings collide in one glorious umami bomb.
Japan’s savory pancake and Italy’s pride had a love child. Layers of cabbage, cheese, savory sauces, and pizza toppings collide in one glorious umami bomb.

Ingredients:


Dough 

  • 1 packet instant yeast (2 ¼ teaspoon)

  • 1 ½ teaspoons sugar

  • ¾ teaspoon salt

  • 2-2 ⅓ cups all-purpose flour

  • 2 tbsp olive oil

  • 3/4 cups warm dashi water


Sauce and toppings

  • Scallions

  • 1 cup of 1” sliced crispy pork belly 

  • 2 cups Mozzarella

  • 1/2 head of green cabbage

  • 1  cup of okonomiyaki sauce (1/4 oyster sauce, 3 tbsp sugar, 1/2 cup ketchup, 7 tbsp Worcestershire sauce) 

  • 1/3 cup Japanese mayo

  • Aonori 

  • Katsuoboshi


Directions:

  1. Preheat oven at 350 with a pizza stone in it.

  2. In a bowl, Mix in all your dry ingredients and lastly olive oil and add dashi stock.

  3. Gradually add second cup of flour and knead well to form it into a ball. Set aside at room temp for 4 hours.

  4. Once risen, knead and flatten to a round pizza shape.

  5. Add okonomiyaki sauce, then mozeralla, blanched cabbage, and thinly sliced pork belly.

  6. Bake for 8 minutes.

  7. Take out add more okonomiyaki sauce, Japanese mayo, katsuoboshi, scallions. Serve.
