Okonomiyaki Pizza

Ingredients:
Dough
1 packet instant yeast (2 ¼ teaspoon)
1 ½ teaspoons sugar
¾ teaspoon salt
2-2 ⅓ cups all-purpose flour
2 tbsp olive oil
3/4 cups warm dashi water
Sauce and toppings
Scallions
1 cup of 1” sliced crispy pork belly
2 cups Mozzarella
1/2 head of green cabbage
1 cup of okonomiyaki sauce (1/4 oyster sauce, 3 tbsp sugar, 1/2 cup ketchup, 7 tbsp Worcestershire sauce)
1/3 cup Japanese mayo
Aonori
Katsuoboshi
Directions:
Preheat oven at 350 with a pizza stone in it.
In a bowl, Mix in all your dry ingredients and lastly olive oil and add dashi stock.
Gradually add second cup of flour and knead well to form it into a ball. Set aside at room temp for 4 hours.
Once risen, knead and flatten to a round pizza shape.
Add okonomiyaki sauce, then mozeralla, blanched cabbage, and thinly sliced pork belly.
Bake for 8 minutes.
Take out add more okonomiyaki sauce, Japanese mayo, katsuoboshi, scallions. Serve.
