Kimchi Fried Rice

Ingredients:


  • Spam (1/2 can and cubed)

  • 2 garlic cloves minced

  • 1 shallot minced

  • 1 inch knob ginger, peeled and minced

  • 2 tbsp butter

  • 2 cups left over rice

  • 1 Tbsp sugar

  • 1 bunch enoki mushroom

  • 1 tbsp gochujang

  • 3.5 oz Kimchi with juice


Topping

  • Fried egg

  • Sesame seeds

  • Scallions

  • Shredded seaweed


Directions:

  1. In a hot wok with olive oil, add cubed spam with sugar and cook for 2 minutes.

  2. Add minced garlic, ginger, and shallots. Cook for 1 minute.

  3. Add enoki mushrooms and cook for 1 minute. 

  4. Add kimchi, Gochujang, and butter and cook for another minute. 

  5. Lastly add the rice and mix until all coated. Flatten the rice with a spatula for that crunchy bottom texture.

  6. Place in a plate and top with a fried egg, scallions, seaweed, and sesame seeds.
