Kimchi Fried Rice

Ingredients:
Spam (1/2 can and cubed)
2 garlic cloves minced
1 shallot minced
1 inch knob ginger, peeled and minced
2 tbsp butter
2 cups left over rice
1 Tbsp sugar
1 bunch enoki mushroom
1 tbsp gochujang
3.5 oz Kimchi with juice
Topping
Fried egg
Sesame seeds
Scallions
Shredded seaweed
Directions:
In a hot wok with olive oil, add cubed spam with sugar and cook for 2 minutes.
Add minced garlic, ginger, and shallots. Cook for 1 minute.
Add enoki mushrooms and cook for 1 minute.
Add kimchi, Gochujang, and butter and cook for another minute.
Lastly add the rice and mix until all coated. Flatten the rice with a spatula for that crunchy bottom texture.
Place in a plate and top with a fried egg, scallions, seaweed, and sesame seeds.
