KARE KARE (PRESSURE COOKER)

Kare Kare is the cozy, peanut buttery bear hug of Filipino cuisine — rich, nutty, and just a little messy in the best way. Traditionally a slow-simmered feast, but thanks to the magic of the pressure cooker, it’s now weeknight-friendly without losing a single drop of deliciousness!
Ingredients
● Bagoong
● 1 large onion, chopped
● 5 cups of water
● 1 tbsp garlic, minced
● 1⁄2 cup peanut butter
● 1 bundle of string beans (cut into 2 inch slices)
● 4 pcs eggplants (sliced)
● 1 bundle of pechay or bok choy
● 3 lbs oxtail (cut in 2 inch slices) you an also use tripe or beef slices
● 2 Tbsp fishsauce
● 1⁄2 cup annatto seeds (soaked in a cup of water) or Tbsp of Annato powder
● 1⁄2 cup toasted ground rice or cornstarch
Instructions
1. Slit the oxtail so that it can cook evenly and season it before you saute the oxtail and remove
2. Chop up some onions and minced garlic then sauce for a minute.
3. add the annatto and later the peanut butter, then add oxtail, fish sauce and water.
4. Pressure cook for about 45 minutes.
5. Let it do it’s thing and steam some of your choice of veggies, preferably eggplant, bokchoy and
string beans for 10-15 minutes.
6. Release steam and Serve all together with rice and shrimp paste for the dip and Ka en na!
