Straight from Okinawa’s kitchen of health and happiness! Goya champuru is a lively stir-fry of bitter melon, pork belly, and scrambled eggs — like a flavor mosh pit where everyone somehow gets along. Okinawans swear by it for long life… and strong opinions about bitter veggies.
Ingredients
● 2 eggs (scrambled)
● 1 long Goya slices or cabbage
● 1/3 lb pork belly slices
● 1 tbs sesame oil
● 1/2 lb Tofu
● Salt and pepper
● 1 tbs flour
Seasoning sauce
● 1 tbs Dashi water
● 1 1/2 tbs shoyu
● 1 Tbs Sake
● 1 tbs oyster sauce
Instructions
Spring salt on sliced Goya and soak them in water for 20 minutes
Season chopped pork belly salt and pepper and coat with flour
Cube up tofu and dry with paper towel
Mix seasoning sauce put aside
Pan fry tofu cubes with olive oil. Put aside
Pan fry pork belly with sesame oil.
Add drained Goya and tofu
Add seasoning sauce and cook
Add scrambled eggs and stir in circular motion
