Gotcha! Pork Roast (Food Wars)

Ingredients:
● 12-13 slices thick cut bacon, center cut
● 1/2 finely chopped onions
● Watercress garnish or Basil (optional)
● 5-6 Yukon potatoes
● 2 lrg king trumpet mushrooms finely minced
● Wire rack
● Butchers twine
● 2 minced garlic
● 4 sprigs rosemary
● 1 Tbsp salt
Red wine sauce
● 1 Tbsp sugar
● 2 Tbsp shoyu
● 1/3 cup sake
● 2/3 cup red wine
● 4 Tbsp butter
Directions:
1. Cut potatoes in quarters and steam for 15-20 minutes
2. Mash potatoes put aside
3. 2 Tbsp butter in wok and add onions and mushrooms for 3-4 minutes 4. Add garlic and until lightly brown, about 4-5 minutes
5. Put shroom mixture in the mash potatoes and add salt and knead
6. Wrap a football shape size potato with seran wrap and chill
7. Lay the bacon and place the chill potato and wrap it with bacon then chill again
8. Now unwrap and tie with butchers twine and slide rosemary under twine
9. Bake into a 400 degree oven for 30 minutes. Let it rest and make red wine sauce
10. Hot pan add red wine, sake, shoyu, 1 Tbsp sugar and whisk until it’s reduced
11. Add cold butter and whisk
12. Pour sauce over pork and add watercress
