Chaliapin Steak Donburi (Food Wars)

Ingredients:


  • 1 Sirloin Steak

  • Minced green onion

  • 2 tbsp mirin infused soy sauce (1:1 ratio of soy sauce and mirin, and 1:2 sugar)

  • 1/2 cup red wine

  • Salt and pepper

  • 4 tbsp butter

  • 1 tbsp oil

  • 1 tbsp umeboshi paste

  • 2 finely minced yellow onions


Directions:

  1. Layer the finely minced onions in a pan

  2. Score the steak cross sliced and pound it all around

  3. Lay steak on top of the minced onions and cover it up with some more minced onions

  4. Let it sit in the fridge for 1 hour

  5. While waiting, cook some rice. And chop up some umeboshi and make into paste. Then mix in at least a tbsp on paste with the rice. Set aside and get ready for steak.

  6. Remove all the onions off the steak and season steak with salt and pepper

  7. In a hot pan, add olive oil and butter. Sear on both sides for 1 minute. Take steak out.

  8. Now add the red wine in the same pan to deglaze. After simmering all the meat juices. Start adding the onions to fry until golden brown then add the mirin infused soy sauce. 

  9. Add rice in a bowl, slice the steak and lay it on the rice. Place onions on top and lastly add some green onions.
