Imagine a sweet potato, but make it a rockstar from Okinawa. Beni imo tarts are the island’s edible love letters — a buttery tart hugging the sweetest, most naturally purple sweet potato you’ve ever seen. It’s like dessert decided to dress up for a kawaii anime convention!
Ingredients
Tart
● 1 cup cake flour
● 1 medium egg yolk
● 1/2 cup butter
● 6 Tbsp granulated sugar
● 2 drops of almond or vanilla extract (optional)
Beni imo cream
● 2 cups of peeled and boiled Okinawan sweet potato mashed
● 2 Tbsp of butter
● 1/2 cup of granulated sugar
Directions:
Tart
1. In a big bowl, mix in soft butter, sugar, egg yolk and flour and wrap it with plastic
2. Keep refrigerated for about 20 minutes
3. Once cool, take a piece enough to fit into a tart mold and prick the bottom with a fork.
4. Bake the tarts at 350 for 15 minutes
Beni Imo Cream
1. Boil and peel 2 cups of purple sweet potato.
2. Mash the potatoes and for a smoother consistency, scrape through a mesh.
3. Add melted butter and sugar and mix until fully incorporated
4. Put int a piping bag and squeeze into the tart and serve.
